Coconut oil, or copra oil, is an oil extracted from the kernel or flesh of mature coconuts harvested from the coconut palm (Cocos nucifera). It has several uses. Due to the high content of saturated fat, it oxidizes slowly and thus highly resistant to spoilage for up to 12 months.

What is the difference between coconut fat oil and fractionated coconut oil ?
When we talk about fats and oils, there is only one distinction: a fat is a solid substance at room temperature and an oil is liquid. Coconut oil is when it's refined and unfractionated it's actually about 91% saturated fat. This means that raw coconut "oil" is solid at room temperature and really makes it a fat. This cold-pressed coconut oil must therefore first be heated above 25 degrees before it becomes liquid.
For coconut oil to really be an oil, it must be fractionated. You bring your raw coconut fat to a certain temperature and you remove the solid parts, leaving an oil. This oil contains less saturated fatty acids and as a result the melting temperature drops a few degrees.
