Peppermint (Mentha piperita): the best-known. Fresh and cool, with a distinct menthol bite.
Cornmint (Mentha arvensis): sharper and even cooler than peppermint, and more affordably priced.
Spearmint (Mentha spicata): gentle and sweet, without that cool bite. Also known as garden mint or green mint.
Wintergreen (Gaultheria procumbens): smells minty, but is not a mint. A raw material in its own right, with stricter usage limits.
